Easy Cherry Recipes

Whether you are honoring George Washington on President's Day or any other day, you will love these easy cherry recipes. Use one or more of the following easy cherry recipes that are dedicated to George Washington who is said to have chopped down a cherry tree, and later confessed, "Father, I cannot tell a lie." The recipes are easy and the results are really good. "I cannot tell a lie."

I do not profess to be a good cook, but I must admit even I can get the desired results from these recipes. 

Whether you choose to make cherries jubilee, cherry cobbler, cherry fluff cake or cherry wine and cherry aspic, you will find that no matter what you make it satisfy your family's sweet tooth.

CHERRIES JUBILEE

2 teaspoons cornstarch
1 tablespoon sugar
1 can (1 lb.) pitted black bing cherries
2 strips orange peel
1 strip lemon peel
1/2 cup warm cognac
1 quart vanilla ice cream

Mix cornstarch and sugar in a medium size sauce pan. Drain 1 cup syrup from the can of cherries and stir into cornstarch mixture. Drop in orange and lemon peels. Cook, stirring constantly, until sauce thickens. Discard peels and add cherries. Transfer to a chafing dish and carry to the table. Add warm cognac and blaze with a match. Ladle flaming over bowls of vanilla ice cream.

CHERRY COBBLER
6 cups pitted tart red cherries
1 3/4 cups sugar
1/3 cup quick cooking tapioca
1 teaspoon grated lemon rind
1/8 teaspoon salt
1/2 package piecrust mix
2 tablespoons butter or margarine

Place cherries in a large bowl, sprinkle with sugar tapioca, lemon rind, and salt. Toss lightly to mix. Let stand while making pastry. Prepare piecrust mix, following label directions. Spoon cherry mixture into a 6-cup shallow baking dish, dot with butter or margarine. Cover with pastry; fold edge under, flush with rim, flute to make a pretty edge. Bake in a 425 degree oven. Cool at least an hour and serve with plain ice cream, if desired.

CHERRY FLUFF CAKE
1 package 8-inch angel cake mix
1 can cherry pie filling 1
package creamy cherry frosting mix

Trim a 1-inch thick slice from top of cake; set aside. Hollow out cake by cutting a deep circle around to about 3/4 inch from center hole. Loosen piece at bottom with a fork and lift out leaving a shell; place shell on a serving plate. Spoon cherry pie filling into shell; replace top slice. Prepare creamy cherry frosting mix with butter or margarine and water, following label directions. Frost cake; chill. Cut into wedges. Serve plain or with whipped cream.

WINE AND CHERRY ASPIC
1 envelope unflavored gelatin
2-4 tablespoons sugar
pinch of salt
1 3/4 cups white or red wine, sherry or port, fruit juice or mixture of these
1 tablespoon lemon juice
2 cups pitted black cherries

Thoroughly mix the gelatin, sugar and salt. Add 1/2 cup of the chosen liquid and stir over low heat until the gelatin is dissolved. Add the remaining liquid, including the lemon juice, and refrigerate until the mixture has the consistency of unbeaten egg white. Then fold in the cherries. Turn into a well-oiled 3-cup mold, or 6 individual molds, and refrigerate until the aspic is firm.

Dian'swords4u: Go on and use one of these easy cherry recipes today. I don't cook that much, but I might eat something cherry in honor of George Washington. Since I'm busy, it might be a strawberry milkshake from McDonald's later today. Now, that's easy!
